There are several reasons I don't usually make cookie pops (a.k.a. cookies on a stick). First of all, you need to make the cookies super thick, so they will be sturdy enough to stay on the stick. I've always made my cookies the same thickness. After baking they are about 1/4" thick. I like that they are not too thick, somewhat delicate.

Well, I was called by Nichols (cool name, no?) of After School All-Stars. She wanted cookie pops, and since this is such a great program and she asked nicely, I said yes.

I was googling "making cookie pops" and most recipes/tips, suggested rolling the dough 3/4" thick! What? That's crazy talk! So I experimented and ended up rolling the dough a little less that 1/2", and it worked perfectly. So, because the cookies are rolled thick, it takes a MOUNTAIN of dough. Then there's the baking time. Of course they take much longer, and then tend to spread a little, distorting the shape. Oh, and then I should have taken a picture of the baking sheet. You can only fit a few cookies on the sheet (maybe 6 instead of 12), because the stick is in the way. So this doubles the baking time too. But it was all worth it!

Wouldn't these be cute for a fairy princess party, as magic wands? Don't be thinking I'll be cranking these out for sale, but if you REALLY want them, I'll do it, but it will cost you! More dough, more time, yadda, yadda, yadda.

Half the cookies had the program's logo (edible image). I was amazed how sturdy they were on the stick. Very cool.
